Chickpea Salad

This is my go to in a pinch. Good for a few lunches.

1 cucumber chopped smaill

1 red pepper chopped small

1/2 onion chopped small

Optional: chopped chives, parsley, basil, avocado

Dressing

3 tablespoons olive oil

Juice of 1 lemon

Sea salt and pepper to taste
